carrot kheer recipe rich and creamy sweetened dessert recipe made with grated carrots and full cream milk. it is generally served during the fasting season, but can be served for any special occasions and celebrations. it is simple and easy to make without any fuss and can be served warm or chilled with a topping of selected ice creams.

kheer recipes are favourite recipes for many indians and are made for various celebrations. generally, the popular variants are made with rice or vermicelli. but this recipe is a unique milk pudding alternative made with grated carrots and sweetened milk.



Ingredients-

Carrot - 3

Milk - 2cups

Water

Sugar - 1/4 cup

Cardamom powder

Cashew nuts

Almond

Pistachio

Saffron Strands (optional )

ghee-1tsp



Method-

* Pressure cook the carrot and grind it to fine paste by adding little milk /water.

* In a pan, add milk and let it boil .

* Add the carrot puree, sugar , cardamom powder, and let it boil for 10 mins

*Add a pinch of saffron, In kadai add ghee add cashew nuts, pistas, almonds roast it and to carrot kheer mixture

and simmer it for 5 mins

*Serve it warm or chilled
