radish paratha recipe mooli paratha is a traditional punjabi cuisine delicacy served usually with butter, curd and pickle. these exotic stuffed paratha can be divine when served with lip smacking curries. while, it is usually served during breakfast. but can also be consumed for lunch and dinner too.
i have always been a huge fan of stuffed paratha recipes. however, my husband prefers plain roti or chapathi recipe. hence, i usually end up preparing just those. but, my husband likes south indian recipes prepared from radish. especially radish sambar and radish pachdi. even my intention was to prepare the same when i bought it last week. however, for some reason i could not prepare it and radish was unattended in fridge since last week. suddenly i remembered mooli paratha recipe and i was able to convince my husband for it.furthermore, before discussing about the radish paratha recipe, i want to highlight the health benefits of radish. radish is very good for liver and helps to cure jaundice. in addition, it also improves the metabolism and digestion. hence reducing the risk of piles and constipation. furthermore, radish is diurectic in behaviour which helps to increase the production urine. finally, radish is considered to be the cure for skin cancer and any respiratory disorders.

Ingredients
To make Filling Grated Radish - 4
Ajwain - 1/4 Tsp
Cumin Seeds - 1/2 Tsp
Ginger - 1 Tsp
Green Chilies - 2
Chili Powder - 1 Tsp
Garam Masala - 1/2 Tsp
Amchur Powder - 1/2 Tsp
Coriander Leaves
Oil
Salt
To make Dough
Wheat Flour - 2 Cups
Ajwain - 1/2 Tsp
Salt
Water
Oil
To make Raita
Curd - 400 Gms
Salt - 1/2 Tsp
Chaat Masala - 1/4 Tsp
Tomato - 1 No.
Green Chili - 1 No.
Coriander Leaves
Method
1. Mix wheat flour, carom seeds, and water and knead it to get a dough
2. Kneading until you get a crack-free dough. A smooth dough helps in making better parathas.
3. Rest the dough for 30 mins
4. Grate the radish/ mooli
5. Take that in a bowl. Sprinkle some salt and let it rest it for about 15 minutes
6. After 15 mins, squeeze out all the water. Squeezing out excess water makes it easier while rolling out the parathas with the filling
7. Heat the oil in a pan on medium heat. Once hot add ajwain, cumin seeds. Let them sizzle a bit
8. Then add chopped green chilies, chopped ginger and grated radish. Mix well
9. Add dry spice powders and mix
10. Cook till mixture becomes dry. Make sure that, it does not have any moisture in it
11. Transfer it to a bowl and let it cool completely
12. After the dough is rested, knead it again for a minute
13. Divide the dough into equal sized dough balls.
14. Flatten the dough balls and place the cooled filling in the centre
15. Fold the flattened dough with the filling into a parcel 16. Flatten it again and roll it out
17. Roll out all the dough balls in the same way
18. Heat a tawa
19. Place the rolled out parathas onto the hot tawa
20. Flip the paratha once it is cooked on one side
21. Add some oil on the edges and cook on both the sides till they turn golden
22. Serve the Mooli Paratha hot with thick curd and pickle
