Paal kozhukattai is one of my friend favourite sweets. I hardly remember the way my mom used to make this sweet. My friend mom made this sweet twice or thrice especially when we went to her place. Her way of making is very different and I am determined to learn it from her,when she makes it next time. This recipe is one I tried which never fails & loves this version equally as my friend mom .
Paal Kozhukattai is a very famous and traditional dish from Tamilnadu, especially in the Chettinad cuisine. This is a sweet dish which not only tastes good but looks appetizing, cute tiny balls are cooked in milk, with the addition of jaggery. But the same can be prepared with sugar, instead of jaggery.
PAAL KOZHUKATTAI RECIPE Recipe Cuisine: Indian | Recipe Category: Sweet/ dessert Prep Time: 20 mins | Cook time: 20 mins | Serves: 4 INGREDIENTS Idiyappam flour/rice flour – 2 cup Water – 1cup Sugar – 2 cup+2tbsp Milk– 1l
cardamom powder – 2 pinches Salt – A pinch
oil-4tsp
METHOD:
Take a add rice flour add a pinch of salt if u r using rice flour,( if ur using store bought idiyappam flour and it had salt in it, so avoid it). sugar 2tbsp
add hot water and forms a dough.
Add 4 tsp oil now and knead the dough. The dough should have got cooked almost and this can be confirmed if the dough is non-sticky. (Dont cook in high flame,cook in medium flame as this will make sure that the dough gets cooked.
Keep covered and take your convenient portions little by little and make tiny balls of desired size. I made it in size of seedai steam in kadai or idly cooker.
Add milk in kadai boil it add sugar cook for 5 mins in low flame den add rice balls .
Boil in medium flame for 3 minutes or until the balls float on the top. By now the milk would have gone thicker.
Add cardamom powder, and mix well until it gets dissolved.
NOTES
I have used sugar,you can replace with jaggery.
You can use fresh coconut milk. – Grind 1 cup of grated coconut in 1/8 cup lukewarm water. Squeeze and collect first milk. Use this in the last step. Again place the squeezed grated coconut in mixer and add 1/2 cup to 3/4 luke warm water, grind and extract the thin milk. use this in step 5. Adjust quantity as mentioned. That is the thin coconut milk should be 2 cups. So add water accordingly.
You can use coconut milk cream or our drinking milk too.
Do not boil after you add the thick milk as there are chances of curdling.
Increase or decrease the sugar amount as per your taste.
I have used unrefined sugar in the updated video.
Serve hot or chilled as per your wish and enjoy this delightful sweet.
